Cris here. When the folks over at RO*TEL and ConAgra asked me to share a recipe with you that would celebrate Hibernation Season in a sponsored post, I was thrilled. My family loves staying in when it is cold outside. Put on a fire, cozy up to a movie or… ahem marathon… on the tv and have something yummy for dinner from the crock pot. Truth be told, that is actually my ideal family time this time of year. So,I just knew we could come up with something that you guys would love to make for those chilly days where y’all want to hibernate as well. And boy, oh boy did we!

The star of this dish of course is the Chili Fixin’s RO*TEL. It definitely made this a dish to warm up to! You can feel free to use two cans of it, but because it packed a little heat and my 8 year old does not like hot flavors, I decided to use one can of the Chili Fixin’s and one can of the mild RO*TEL as a substitute.

When I told Mikey what I planned to make, he said we should totally do an episode of Cookin’ Cris’ Dishes on his YouTube channel to really show you guyshow easy it is to throw together… or it was just an excuse for him to wear his ranch hand hat ;)…

Recipe Notes

  • We used our 6 qt Ninja Slow Cooker to make this recipe which allowed us to brown the meat in the unit but you can use any 6 qt or larger slow cooker and just brown your meat on the stove.
  • Like I said before, you can turn up the heat or turn down the heat depending on which RO*TEL tomatoes you choose to use.
  • This recipe is very versatile. You can substitute your favorite veggies for the frozen ones we used and any style beans you would like.
  • The soup is quite meaty because my familyloves it that way. If you’d like a soupier consistency, just reduce your meat from 2 lbs to 1 lb.
  • We served this up with tortilla chips, plain Greek yogurt and shredded cheese. It would also be good with green onions, sour cream, guacamole, crackers or any other chili/taco soup fixin’s.
  • This recipe makes a lot. We freeze the leftovers of this soup in our favorite little 2 cup soup containers. Then I just pop onein Miss Add’s lunch for her to heat up at school.

FAQs

Is chilli better in crockpot or stove? ›

Chili is perhaps the ideal slow-cooker dish because its flavor improves with a long, slow simmer.

How to make chili in crockpot thicker? ›

To quickly thicken it, put some cornstarch in a cup with liquid from the chili, stir, add to the chili. For a more "authentic" thickening, just keep it on a low simmer, but it will take longer.

What can I add to chili to make it more soupy? ›

In addition, broth, beer, and/ or water is usually added to produce the desired consistency in the pot of chili. I usually add one or two cups of beef broth. If you put tomatoes in the stew, this will also provide plenty of liquid.

How to thicken up white chicken chili? ›

Use All-Purpose Flour or Cornstarch

"Transfer some warm liquid [from the chili] to a separate bowl. Whisk in the flour or cornstarch, then slowly stir it back in the pot," advises Wofford. Bring the mixture back to a boil, which will "activate" the ingredient, instantly thickening the dish.

Why does my crockpot chili taste bland? ›

Insufficient seasoning, such as chili powder, cumin, paprika, and salt, can lead to bland chili. Chili relies on a combination of spices and seasonings for its distinctive flavor. Be sure to taste your chili during the cooking process and adjust the seasonings as needed.

How do you keep chili from getting watery in a slow cooker? ›

Mix in a scoop of cornstarch, all-purpose flour, or oats.

In a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of water, then stir this into the pot of chili. For 1 tablespoon of flour, use 2 tablespoons of water. No slurry is required for the absorbent oats; simply stir in 1 to 2 tablespoons.

Should chili be thick or soupy? ›

Chili should be thick and hearty enough to be a meal on its own, but sometimes there's just a bit more liquid than you want in the pot. While you can simply keep simmering the chili, that method risks overcooking softer ingredients like the beans, losing all your nice texture to mushy monotony.

Will tomato sauce thicken chili? ›

Not only will tomato paste add a tangy flavor to the dish, but it will also act as a thickening agent. For this purpose, you can use homemade or store-bought tomato paste. Add 1 can of the paste to your pot of chili, stir the mixture, and let it cook on medium heat for about 30 minutes.

What is the best ingredient to thicken chili? ›

Add cornstarch or all-purpose flour: Cornstarch and all-purpose flour are common thickening agents that you might already have on hand in your pantry. Adding flour directly into the chili will create lumps. Instead, make a slurry by mixing one tablespoon of cold water with one tablespoon of cornstarch.

What is the best liquid for chili? ›

Chili cooks low and slow, so you need enough liquid to tenderize the meat and keep everything from drying out. That liquid should also add flavor to the chili, so use chicken, beef, or vegetable stock, or beer.

What spice gives chili its flavor? ›

Cumin, Chile Powders, and Paprika are the most common spices in chili followed by garlic, onion, coriander, Mexican oregano, and bay leaves. These ingredients can be combined to create a savory and well-balanced pot of top notch comfort food.

How do you thicken chili without changing taste? ›

Using Cornmeal to Thicken Chili

Cornmeal is one of our go-to thickening agents for chili. Unlike all-purpose flour, this Southern pantry staple adds a subtle earthy flavor to the chili in addition to thickening it up. You can use white or yellow cornmeal that is fine to medium-grain.

Will chili thicken as it cooks? ›

Yes! The longer you simmer chili with the lid off of the pot the thicker it will get. The excess liquid will turn into steam and help reduce the chili down to a nice, thick consistency.

Can you add milk to chili? ›

Add More Ingredients: If you can, add a bit more of your other ingredients – more beans and stock, for example – to increase the amount of chili and “dilute” the spiciness. Add Dairy: Milk and cream are great for cutting through spiciness, so splashing in some dairy is worth a try.

What is the best appliance to cook chili on? ›

For making great chili, it's a tie between the Dutch oven and the multi-cooker in slow-cook mode. Each requires some tweaking in the cooking methods, though. The Dutch oven chili had the best aroma, heat, and flavor, but it looked less than appetizing due to its dry texture. And the longer it sat, the thicker it got.

Is stew better in crockpot or stove? ›

Slow Cooker vs.

While high heat may cook the potatoes and meat quickly, only low, slow cooking can create the tender morsels of meat and flavorful broth that we seek. The stove (hob) will create a thicker broth/gravy for the stew because more liquid will escape during cooking in the form of steam.

Does chili taste better the longer you simmer it? ›

A low and slow cook time—at least an hour total—is key for drawing out the most flavor in a pot of chili. Yes, a quick chili is most welcome on weeknights, but it won't have quite the same results. A slow cooker works wonders, but if you're short on time, try a pressure cooker.

Is slow cooker more efficient than stove? ›

Not only are slow cookers ideal for people who want to leave dinner to simmer away and attend to other errands, they work out to be one of the cheapest appliances to cook with in the kitchen. The electricity usage of an electric oven is estimated to be around two to 2.2kWh, compared to a slow cooker at just 0.7kWh.
